If possible, leave your pea pods on the plant, when saving them for seed. Let them get as dry as possible while on the plant, and when they turn brown and papery, bring them in to continue drying.
When really dry, shell the peas from the pod and spread them out on a tray or plate to dry further. Pick out and discard any that are damaged or discoloured.
When really dry, put them in an envelope and label with the variety and the date.
